RECIPE: Juicy Mango Coleslaw

OK, so any recipe that begins with “JUICY” has got me! You know that whole “you had me at HELLO” thing! Uh YEAH!! It is perfect timing for this mouth watering mango coleslaw recipe! It’s summer time and you are ready to pull out the grill every weekend.   You want something not too fattening since you are already grilling your Rub It Down With Love Grilled Dry Rub Pork Ribs and baking your Keep Em’ Coming Back Mac & Cheese, the perfect compliment would be Juicy Mango Coleslaw! And to think there are only 3 steps to this recipe, add, fold and ENJOY! My kinda recipes for sure! To top all that it packs a POW BAM KABOOM kinda flavor!

JUICY MANGO COLESLAW

INGREDIENTS:

1 10 oz. bag of broccoli cabbage
1/2 cup shredded carrots
2 ““ 2 ½ cups of medium diced mangos chunks (I buy pre-sliced and just cut those up)
1/4 cup fresh cilantro
3 tbsp. granulated sugar
4 tbsp. lemon juice
8 ounces of Vidalia Onion Vinaigrette salad dressing
1 tsp. sea salt
1 tsp. black pepper
1/4 cup red onions (this is option, some people do not like onions but it does add another pop of flavor)

READY, SET GO:

1. Add all ingredients to a bowl
2. Gently fold together (do not over fold and mush the mangos, remember gently)
3. ENJOY, ENJOY, ENJOY!!!

Tip: Double ingredients to make more
