This post is dedicated to a FACEBOOK FAN ““ Tina Ball, she requested a spinach & artichoke dip recipe, here ya go Tina! ANOTHER GREAT GAME NIGHT ADDITION!! My addiction to spinach & artichoke dip began in my young adult years at Houston’s restaurant in Washington, DC. Houston’s spinach & artichoke dip just melted in your mouth, well really all their food did that BUT it was something about their spinach & artichoke dip that just kept me going back. At one point my best friends and I met at Houston’s weekly for salad and spinach & artichoke dip, we were all addicted (especially Lynelle ““ HA yes I put you out there Nelle). This spinach & artichoke dip reminds me of Houston’s just with a mild kick to it from the hot sauce. This is one of those recipes I need to add my disclaimer: She’s Got Flavor is not responsible for any addictions that are derived from any recipes on this cooking blog! OK, now that we’ve cleared the air, ENJOY this spinach & artichoke dip, make it for friends and family so they can rave over your fine culinary skills! OH and by the way this spinach & artichoke dip would go perfectly with my Game Night Finger Lickin Buffalo Wings!
DREAMY CREAMY SPINACH & ARTICHOKE DIP
INGREDIENTS:
2 boxes of the 10 oz. frozen chopped spinach
½ stick unsalted butter
and a little more unsalted butter to butter your baking dish
¼ cup all-purpose flour
2 cups heavy whipping cream
½ cup sour cream
½ cup chicken broth
1 of the 12 oz. jars of artichoke hearts (drained & and finely sliced)
1 tbsp. crushed or finely chopped fresh garlic
¼ cup of finely chopped red onions
2 tbsp. lemon juice
1 tbsp. hot sauce (I use Franks)
½ cup shredded Parmesan cheese
½ cup shredded monetary jack
Sea Salt (to taste)
READY, SET GO:
- Pre-heat oven to 400
- Cook frozen spinach per instructions on box
- Strain all liquid from spinach and set aside
- In a large sauce pan on medium heat, sauté the onions and garlic in the unsalted butter for 5 minutes
- Whisk in flour and cook for 2 minutes
- Whisk in heavy whipping cream, chicken stock and continue to cook until boiling
- Stir in hot sauce, lemon juice, sea salt and parmesan cheese and stir until cheese melts
- Remove from heat and allow to cool for 3-5 minutes
- Fold in sour cream, drained spinach and sliced artichokes
- Transfer to a buttered baking dish and sprinkle shredded monetary jack cheese on top
- Bake in oven on 400 degrees for 10-15 minutes, just until monetary jack cheese
- Take out of oven and use an oven mitten to hold one side of the dish while you use a spoon to stir the dip with the other hand until all the monetary jack cheese is incorporated with the dip
- Serve with Tortilla chips (I use Tostitos Scoops)
- This is like the best spinach & artichoke dip EVER! ““ ENJOY, ENJOY, ENJOY!!!
Tip: You can also serve sour cream on the side as well (that’s my favorite)
